Suflê de Peixe – Fish souffle

What summer is without a fresh fish recipe? Portugal is a really rich source of many inviting recipes. I would share with you this easy and intriguing one.


200g loin of hake
60g of bread
Milk to soak the bread
1 egg yolk
2 egg whites
Salt (to taste)
Pepper (to taste)
1 tablespoon margarine
Juice of one lemon


In a pan with water, place the fish, simmer and cook about three minutes. Remove to a plate, allow to cool and shred the fish.
Add the bread soaked in milk, the margarine, an egg yolk, salt, pepper, the lemon juice and wrap everything nicely.
Beat the egg whites until stiff, add to the previous mixture and mix everything well.
Pour the mixture in a souffleform greased with margarine. Place in preheated oven at 180°C about 10 to 15 minutes.
